Every year, aquaculture shrimp in Mexico is harvested from July through December, making one to two pre-harvests of smaller sizes during July and August and, leaving lower densities in the ponds to grow larger sizes to average 21/25’s. The smaller shrimp harvested during the pre-harvest period is sold to the Mexican domestic market which pays higher prices than the USA.
