Quality arises from the purity of our water ponds, excellent feed, and HACCP packing standards. The relative higher salinities of our Mexican farms, compared to the lower pond salinities of other countries, turn into a richer amino acid profile in the tail muscle that delivers a “sweeter” taste to the shrimp. Shrimp is farmed under ideal environmental conditions of open ocean. Our shrimp larva is gathered from healthy hatcheries after being taken from naturally and non-genetically raised brood stock.

Mexican shrimp from Diazteca sets the world’s GOLD STANDARD. Diazteca farms are located along the eastern coast of the Sea of Cortez, particularly in the Mexican states of Sonora and Sinaloa. And, our wild shrimp is trawled in the deep slot between mainland Mexico and the Baja Peninsula.

Diazteca’s quality is maintained through quick freezing processes starting immediately upon harvest. Diazteca’s shrimp is harvested, water chill-killed at 40 degree Fahrenheit, and immediately frozen in one of our nearby Diazteca’s approved HACCP certified processing facilities.
